Activated Buckwheat Bircher

Activated Buckwheat Bircher

I love ease. Especially in the morning, when you have a toddler who wakes up full of energy, it’s nice to have the ease of no real prep work for breakfast.

On a Sunday I whip together a big jar of bircher, which will usually last the week. Then every night before bed I put together my bircher mix so its ready for the morning. All I need to do in the morning is add some fresh fruit and maple syrup.

I like to activate my Buckwheat Groats to break down the Phytic Acid. Phytic Acid is naturally occurring in all nuts, seeds, grains and legumes. You don't have to do this step if you don’t want to but it’s become a habit for me.  I feel like it digests easier and from what I’ve read, your body absorbs minerals better as well. Definitely do your own research on that one, as I’ve also read there can be benefit’s to Phytic Acid also.

I love Buckwheat, Its super high in Protein and Fiber. Using the Groats as my Main ingredient to my Bircher, this means I stay full for longer but I don’t feel mega full or bloated. And it tastes amazing!

4 cups of activated Buckwheat Groats
½ cup Chia seeds
1 cup dried Mango roughly chopped
1 cup Goji Berries
1 cup of mixed nuts
½ cup flax seeds
½ cup Slithered Almonds

Mix these up in a large jar or container.

1 cup of Bircher Mix
2 heaped Tbsp. Coconut Yoghurt
½ cup Coconut Milk
½ Orange or 1 Mandarin

Mix all ingredients together, put into a jar and place in the fridge over night.

Top with fresh fruit, then drizzle with maple syrup.

Both the Bircher Mix and Breakfast Bircher indigents can be totally varied to what I’ve listed. Use any dried fruits, nuts, seeds and even cacao nibs.

You can add orange juice to the Breakfast Bircher, which gives it an amazing flavour.

Make some as a takeaway lunch or on the go snack!
